Early shotshells

During my trip to US I saw these rounds who belong to an advanced shotshells collector.
I know very little about primitive shells.
Could somebody tell me the name of these rounds.

(they called it also Demondion in the US).

How does this thing actually work? What does the bit sticking out of the base actually do? I have never seen anything like this before.
