I just found a shotgun top while metal detecting. It say UMC Co New Club No 12. Are these things old and do they have value?

The UMC New Club line dates from about 1892 and UMC headstamps transitioned to REM-UMC or other like combinations after around 1912 with the joining of Remington and Union Metallic Cartridge companies.
A dug shotshell head would likely have very little monetary value but these types of finds can be interesting none the less.
